First of all, hang in there and don't go crazy. There is a solution for everything.
The secret to everything is
calories in vs calories out. There is no secret to losing weight. Since you can't eat vegetables, maybe just reduce what you can eat. Start reducing the portions. Write down everything you eat. Try
FitDay - Free Weight Loss and Diet Journal. Also, drink LOTS of water. It really helps.
The other thing is that you don't exercise. That is a major aspect in losing weight, but since your work schedule is extensive, what about on weekend? You say that you live in a rural area. Why not take a walk during the day outside? It's better than nothing....
