I second HIIT, one of the best fat burning methods around! As long as you're eating fewer calories a day than your body is burning, then you will continue to lose weight and shouldn't flatline. As you lose weight your body burns less calories so in theory you should readjust your calorie intake as you drop weight to keep up the same weight loss pace.
