Hi back! I'm so happy you like it. My family loved the first batch too, but oh my sweet tooth, so I made a second batch with a bit more splenda in it. 1 1/4 cup instead of 1 cup. I love to experiment anyway. Also, the second batch I baked for a bit less time. 13-14 minutes instead of 15, & they came out more moist.
What just knocked everybody out is that these are all protein and antioxidants. So good for your health! Somewhere in the book it says that one tablespoon of unsweetened non-alkalinized cocoa has 4,000 antioxidants. I'm ecstatic about that. I use the Hershey's btw, the little brown box. I've noticed that a lot of supermarkets are starting to carry their own brands of non-alkanized cocoa, now that the word is out about its health properties, and that's fine. Just make sure the box doesn't say "Dutch processed" or "alkalinized," because that destroys the antioxidants. The book is also fascinating to read, because it explains so much about health and antioxidants that I'd never understood.
