Tufts Professor Says Food Companies Not Only Source Of Blame
An expert in food-related business said Saturday that it's easy to blame big food companies for the fact that more and more Americans are either fat or obese -- but he added that people tend to eat more and move less, so a good deal of is is their fault.
Tufts University professor James Tillotson said food companies have spent billions of dollars keeping products on people's minds and in their mouths. Likened by some to the way tobacco companies seduced smokers, such practices have made the food industry the target of lawsuits and legislation, he said.
But Tillotson said neither the problem nor the solution is nearly so simple.
Tillotson, a former food industry executive, said it's time for many Americans to share the blame.
"We want to blame somebody, but the thing is, we're all a part of it," he said.
