Serves 6 Each serving equals one and a half 5 A Day servings.

Ingredients

1½ cups split peas
6 cups water
1 medium diced onion

In a large pot, combine split peas and water, and bring to a boil. Reduce heat. Cover and let simmer until tender (1 hour). Add onion, potato, garlic powder, salt and pepper to taste, dried parsley, and carrots. Simmer, covered, for 1 hour. Transfer soup mixture in batches to a blender, and puree until smooth. Return to heat and warm through.

Nutritional analysis per serving: Calories 155, Protein 9g, Fat 16g, Percentage Of Calories From Fat 3%, Cholesterol 0mg, Sodium 17mg.

Wow, I didn't even miss the ham I usually put in. This soup was velvety, delicious and I would definitely make it again. Level of difficulty-Easy!
