Try not to think of this as diet mode, but a long term lifestyle change. Force yourself to eat more protein and drink more fluids and I bet your body won't crave as much in the carb department. Why not make a list of what your meals/snacks are supposed to be each day? A lot of people find it easier to follow what's written down on paper. Again, you're going to have to ween yourself off all these carbs eventually to achieve your goals. Have you considered keeping track of what you eat for a week to figure out what you personally eat carbwise on an average day, and then setting goals for yourself each week?
For example if you eat 200g of carbs each dayon average, then only allow yourself 190g of carbs each day the next week, then 180g the week after that, etc.
Going right to a low carb diet from your high carb lifestyle would be very difficult. Slow and steady is going to win the race for you in the long run. You don't have to quit everything you do cold turkey overnight.
Something else to consider, is that many people who consume a lot of artificial sweeteners report having an even higher craving for carbs/sweets. I'm not sure if that impacts you.
