A big part of calves are genetics, although I think if you REALLY want to make them bigger doing calf exercises with heavy weights can make a difference. Changing the shape is a lot more difficult I would think
I would love to see a before and after picture of Arnold Schwarzenegger's calves.

They were huge, although now? Not so much.
