4 cup extra virgin olive oil
1 garlic clove, minced

4 cup thinly sliced fresh basil leaves
1 tablespoon grated orange zest
1 tablespoon grated lemon zest
1 teaspoon grated lime zest
10 whole black peppercorns
1 (11-ounce) log goat cheese, sliced into 6 rounds
1. Combine oil, garlic, basil, orange zest, lemon zest, lime
zest and peppercorns in a bowl; mix well.
2. Place goat cheese slices in a small, shallow pan. Pour
oil mixture over cheese. Cover and refrigerate overnight,
turning occasionally. Bring to room temperature before
serving. Each goat cheese round serves two.
Show off the beauty of this sophisticated appetizer by serving it
on an elegant plate. It can be prepared up to two days in
advance and kept covered in the refrigerator. Radicchio leaves
make a great low-carb substitute for crackers.
