Atkins - Creamy Spinach Soup

CREAMY SPINACH SOUP

2 tablespoons unsalted butter
1 small onion, finely chopped (3/4 cup)
1 teaspoon chopped garlic
2 boxes (10 ounces each) frozen chopped spinach, thawed
and drained
3 cans (14 1/2 ounces each) reduced-sodium chicken broth
2 cups heavy cream
1/2 teaspoon nutmeg, freshly ground
salt and freshly ground black pepper
1. In a large stockpot, melt butter over medium heat. Add
onion and saut until softened, about 4 minutes. Add
garlic and saut until aroma is released, about 30
seconds. Add spinach and broth and simmer 5 minutes,
to allow flavors to blend.
2. Puree soup in blender in batches and return to pot.
3. Add cream and cook on low until heated through. Finish
with nutmeg and season to taste with salt and pepper.
This soup is a twist on an all-time favorite, creamed spinach.
