Atkins - Deviled-Egg Coleslaw

DEVILED-EGG COLESLAW

Protein: 2 grams
Carbohydrates: 3 grams
Fiber: 1 grams
Net Carbs: 2 grams
2 hard-boiled eggs, finely chopped
3/4 cup mayonnaise
3 tablespoons whole-grain mustard
3 tablespoons finely minced onion
2 teaspoons white vinegar
1/4 to 3/4 teaspoon hot red-pepper sauce, to taste
1 teaspoon salt
1/4 teaspoon Old Bay
TM seasoning
1 small head green cabbage, cored and thinly sliced (7 1/3
cups)
1. Combine all dressing ingredients in a large bowl. Add
cabbage, and toss well.
2. Cover, and chill for at least 1 hour before serving.
Two perennial favorites team up with a kick in this savory recipe.
Start with 1/2 teaspoon hot red-pepper sauce, and add more to
taste. The slaw can be prepared ahead of time, covered and
refrigerated overnight.
