Atkins - Green Salad with French-Style Dressing

GREEN SALAD WITH FRENCH-STYLE DRESSING

1/4 cup canola oil
2 tablespoons red wine vinegar
2 tablespoons Atkins Quick Quisine
TM Ketch-a-Tomato
2 teaspoons granular sugar substitute
1/2 teaspoon Dijon mustard
1 green onion, chopped

6 cups mesclun salad greens
1 small cucumber, peeled, seeded and thinly sliced
1. For dressing, combine oil, vinegar, ketchup, sugar
substitute, mustard and green onion in a blender and
blend until smooth. Add salt to taste. Toss greens and
cucumber with dressing; divide on 4 plates.
Instead of buying the high-carb neon orange bottled stuff, whip
up this 5-minute dressing and taste the difference. This dressing
also makes a super topping for steamed cauliflower or broccoli.
